Mussels with Fennel

I have always been a fan of Top Chef, on Bravo. I have liked it as long as I can remember well at least since I came here to the United States of America. Seeing Padma Lakshmi, as one of the judges on the show is very interesting, and most of all I think she is beautiful. My eyes do not get tired of watching her on the show, simple yet stunning to look at. Being a huge fan of her of course I’m following her on Twitter. So when she posted a picture through Instagram, of mussels, hmmm I thought it looked delicious. Though she used fennels and I had no idea what fennel taste like. I’m only used to using ginger and white wine when I cook mussels. Tonight, I cooked mussels for my dinner instead of eating leftover pizza, or calzone from Mellow Mushroom. Well, when Padma, posted the photo it has no measurements of ingredients so I just made it on my own.

Mussels with fennel

2 tbsp olive oil
2 lbs mussels
1 bulb fennel
2 tomatoes
1 onion
1 clove garlic

I preheat the pan. Add the oil, garlic, onions, tomatoes, and fennel until translucent. Add the mussels and cook for about 8 minutes with the lid on. Season with salt, and a pinch of msg. Serve with rice, and it tasted really good. Mussels is a boring dish but you can make it scrumptious. Serve as an appetizer with shredded parmesan, or cheddar cheese and cook in the oven for about 10 minutes at 400 degrees.
